Ingredients

  • 1/4 cup sugar
  • 1/4 cup water
  • 1/8 cup raspberries or 1/2 cup strawberries
  • Crushed ice
  • 1 tablespoon berry syrup
  • 3/4 cup sparkling water
  • Splash of half-and-half

Instructions

  1. In a saucepan, boil the sugar and water until the sugar begins to dissolve.
  2. Add the berries and simmer for 15-20 minutes until the berries turn to mush and the liquid thickens.
  3. Strain the mixture over a bowl to separate the juice from the fruit. Discard the fruit and refrigerate the syrup until ready to use.
  4. Fill a tall glass with crushed ice.
  5. Pour 1 tablespoon of berry syrup over the ice.
  6. Pour in the sparkling water.
  7. Add a splash of half-and-half to taste.
  8. Use a straw to gently stir the mixture together.
