Ingredients

  • Rainbow sherbet, to taste
  • Fresh raspberries, for pitcher and sherbet
  • 1.50 oz fruit punch concentrate, thawed
  • 1.50 oz pink lemonade concentrate, or raspberry lemonade, thawed
  • 0.25 cup vodka
  • 1.25 cups ginger ale, chilled
  • 1/4 bottle champagne, chilled
  • Fresh mint, optional

Instructions

  1. Place four to five raspberries in a cupcake liner in a muffin tin.
  2. Top the raspberries with a scoop of rainbow sherbet and freeze until ready to serve (best if frozen for at least two hours).
  3. In a large pitcher, mix together the thawed juice concentrates, raspberries, and vodka.
  4. Just before serving, mix in the chilled ginger ale.
  5. Remove a scoop of sherbet from the cupcake liner and place it in a large mug.
  6. Fill the mug halfway with the punch mixture.
  7. Finish by adding champagne and garnish with fresh mint.
  8. Enjoy!
