Ingredients

  • 1/2 cup Bing or Rainier cherries, pitted
  • 1/2 tablespoon sugar
  • 1 sprig fresh thyme
  • 1/2 tablespoon water
  • 1/2 tablespoon fresh lime juice
  • Ice
  • Club soda (soda water)

Instructions

  1. In a saucepan, combine the pitted cherries, sugar, thyme, and water. Cook until the cherries have softened.
  2. Remove from heat, let it cool, discard the thyme, then blend the mixture until smooth.
  3. Strain the puree through a fine-mesh sieve into a pitcher and stir in the fresh lime juice.
  4. Refrigerate the mixture for at least 30 minutes.
  5. Fill a glass with ice and pour the cherry mixture one-third full.
  6. Top with club soda and stir gently.
