Ingredients

  • 1 cup almond milk
  • 1 egg
  • 1/2 tbsp. honey
  • 1/2 tsp. vanilla extract
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg

Instructions

  1. Place all ingredients into a blender and blend for 2 minutes to achieve a light and airy mixture.
  2. Pour the mixture into a small saucepan and heat over low heat for 15 minutes, stirring often to prevent scrambling.
  3. Aim for the eggnog to reach 160 F; if you don't have a thermometer, cooking over low heat for 15 minutes should suffice.
  4. Allow the eggnog to cool and then pour it into a mason jar or leave it in the pot before chilling it in the fridge overnight or until thickened.
  5. Enjoy the eggnog as desired, over ice, with a shot of your favorite booze, or stirred into a hot cup of coffee.
