Ingredients

  • 1 1/3 tablespoons unsalted butter
  • 2 1/2 tablespoons packed dark brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract
  • 1/8 teaspoon freshly grated nutmeg, plus extra for sprinkling
  • Pinch of ground allspice or ground cloves
  • Pinch of kosher salt
  • 1/3 cup water
  • 2 tablespoons dark rum
  • 1/3 cup whipped cream (optional)
  • 1 cinnamon stick (4 inches long)

Instructions

  1. Place the unsalted butter in a medium heatproof bowl and let it soften at room temperature.
  2. Add the dark brown sugar, ground cinnamon, vanilla extract, freshly grated nutmeg, ground allspice or ground cloves, and kosher salt to the softened butter.
  3. Use an electric hand mixer to beat the mixture on high speed until fluffy and smooth for about 2 minutes.
  4. Boil the water in a kettle or medium saucepan. Let it cool slightly for about 30 seconds.
  5. Carefully pour the water into the butter mixture and add the dark rum.
  6. Beat the mixture with the mixer on medium speed until the butter is dissolved and the mixture is frothy, for 1 to 2 minutes.
  7. Divide the mixture between mugs and top with whipped cream if desired.
  8. Sprinkle with more freshly grated nutmeg and garnish each mug with a cinnamon stick.
