Ingredients
- 1/4 cup sugar
- 1/4 cup cranberry, pomegranate, or cherry juice
- 1 1/2 sprigs rosemary
- 1 oz ruby-red simple syrup
- 1 oz lemon juice
- 1 oz gin
- 2-3 oz champagne
- Garnish: rosemary sprig and pomegranate seeds
Instructions
- In a small saucepan, combine the sugar, juice, and 1 1/2 sprigs of rosemary. Bring to a boil, then simmer for a few minutes. Remove from heat and allow to cool, allowing the rosemary to infuse. Strain the syrup and refrigerate.
- Pour the ruby-red simple syrup into a champagne flute.
- In a cocktail shaker, combine the lemon juice and gin, add ice, and shake well.
- Strain the lemon-gin mixture into the champagne flute.
