Ingredients
- 2 cups whole milk
- 2.50 tablespoons sugar
- 1/2 vanilla pod or 2 teaspoons vanilla extract
- 1 small cinnamon stick
- 3 cloves
- Pinch of freshly grated nutmeg
- 3 egg yolks
- 1/2 cup brandy
Instructions
- In a heavy-bottomed saucepan, combine the milk, sugar, vanilla, cinnamon, cloves, and nutmeg. Bring to a near boil over medium heat.
- Simmer the mixture for 20 minutes, stirring occasionally, until aromatic and slightly thickened.
- In a large bowl, beat the egg yolks until pale and creamy.
- Slowly pour the milk mixture into the egg yolks while whisking continuously.
- Return the mixture to the saucepan and simmer on medium heat, stirring constantly, until thickened.
- Remove from heat and let it cool for 5 minutes, then stir in the brandy.
- Transfer the Rompope to sterilized bottles or jars and cool completely before storing in the fridge for at least a week to allow the flavors to develop.
- Serve cold or warm, optionally garnished with a sprinkle of cinnamon and icing sugar.
