Ingredients

  • 2 cups whole milk
  • 2.50 tablespoons sugar
  • 1/2 vanilla pod or 2 teaspoons vanilla extract
  • 1 small cinnamon stick
  • 3 cloves
  • Pinch of freshly grated nutmeg
  • 3 egg yolks
  • 1/2 cup brandy

Instructions

  1. In a heavy-bottomed saucepan, combine the milk, sugar, vanilla, cinnamon, cloves, and nutmeg. Bring to a near boil over medium heat.
  2. Simmer the mixture for 20 minutes, stirring occasionally, until aromatic and slightly thickened.
  3. In a large bowl, beat the egg yolks until pale and creamy.
  4. Slowly pour the milk mixture into the egg yolks while whisking continuously.
  5. Return the mixture to the saucepan and simmer on medium heat, stirring constantly, until thickened.
  6. Remove from heat and let it cool for 5 minutes, then stir in the brandy.
  7. Transfer the Rompope to sterilized bottles or jars and cool completely before storing in the fridge for at least a week to allow the flavors to develop.
  8. Serve cold or warm, optionally garnished with a sprinkle of cinnamon and icing sugar.
