Ingredients

  • 1/4 cup heavy cream
  • 1 large egg yolk
  • 1 tablespoon sugar
  • 1/2 cup whole milk
  • Pinch of salt
  • 1 tablespoon dark rum
  • Pinch of ground nutmeg

Instructions

  1. In a medium bowl, whisk together heavy cream, egg yolk, and sugar until pale yellow and thoroughly combined.
  2. In a saucepan, bring whole milk and salt to a simmer over medium-high heat.
  3. Slowly pour the hot milk into the yolk mixture while whisking constantly to temper the eggs.
  4. Return the mixture to the saucepan and cook over medium-low heat, whisking constantly, until it reaches 160 degrees.
  5. Pour the eggnog into a clean bowl and stir in the rum and nutmeg.
  6. Place the bowl in a larger bowl filled with ice and refrigerate until chilled, stirring occasionally.
  7. In a stand mixer, whip the remaining heavy cream until soft peaks form.
  8. Whisk the whipped cream into the chilled eggnog and serve, garnished with extra nutmeg.
