Ingredients
- 1/4 cup heavy cream
- 1 large egg yolk
- 1 tablespoon sugar
- 1/2 cup whole milk
- Pinch of salt
- 1 tablespoon dark rum
- Pinch of ground nutmeg
Instructions
- In a medium bowl, whisk together heavy cream, egg yolk, and sugar until pale yellow and thoroughly combined.
- In a saucepan, bring whole milk and salt to a simmer over medium-high heat.
- Slowly pour the hot milk into the yolk mixture while whisking constantly to temper the eggs.
- Return the mixture to the saucepan and cook over medium-low heat, whisking constantly, until it reaches 160 degrees.
