Ingredients

  • 1 oz coconut rum or vodka
  • 1 oz blue Curacao
  • 1 oz cream of coconut
  • 2 oz pineapple juice
  • 2 - 3 cups ice
  • coconut flakes (for glass rim)
  • simple syrup (for glass rim)

Instructions

  1. Use a finger to apply simple syrup around the rim of the glass. Dip the rim in coconut flakes.
  2. In a blender, combine the coconut rum or vodka, blue Curacao, cream of coconut, and pineapple juice.
  3. Add 2-3 cups of ice to the blender and blend until the mixture is thick and smooth.
  4. Pour the blended cocktail into the prepared glasses, being careful not to pour over the rim.
