Coquito, also known as Puerto Rican eggnog, is a delicious coconut and rum based drink flavored with nutmeg, cinnamon and vanilla. This recipe offers a low-carb and paleo twist by using keto condensed milk instead of sugary condensed milk. It's a festive and creamy cocktail that's perfect for the holiday season or any special occasion.

Ingredients
- 1/4 cup liquid coconut milk
- 2 tbsp homemade Dairy-Free Keto Condensed Milk or Keto Condensed Milk
- 1/4 cup coconut cream
- 1/4 tsp vanilla bean powder or 1/2 tsp unsweetened vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 cup white rum
- Optional: liquid Stevia to taste
Instructions
- Prepare the Dairy-Free Keto Condensed Milk or Keto Condensed Milk and set aside.
- Place all the ingredients into a blender or use an immersion blender: coconut milk, coconut cream, keto condensed milk, nutmeg, cinnamon, vanilla, and white rum. Process until smooth and frothy. Add a few drops of stevia to taste, if desired.
- Pour the mixture into a glass and refrigerate for 1-2 hours or until cold. Serve with ice if you don't have time to chill.
- Enjoy or store in the fridge for up to 4 days. If the coquito gets too thick in the fridge, gently reheat until melted and stir to combine.
