Melon Bliss Prosecco Spritz
A delightful and refreshing cocktail that combines the sweet essence of cantaloupe with the aromatic touch of lemon verbena, all mixed with the effervescence of Prosecco.
Ingredients
- 1 1/2 tbsp sugar
- 1/2 tbsp lemon verbena leaves
- 1 small ripe cantaloupe
- Prosecco or other sparkling wine (for serving)
Instructions
- In a small saucepan over medium-low heat, stir together the sugar, lemon verbena, and 1 1/2 cups water until the sugar dissolves.
- Reduce the heat to low and gently simmer the mixture for 10 minutes. Let it cool, then strain the syrup into a pitcher, discarding the solids.
- Halve the cantaloupe, remove the seeds, and scoop the flesh into a blender. Purée until smooth, then stir into the syrup.
- Chill the melon mixture until cold and foam has settled, approximately 1-2 hours.
- To serve, fill a glass a third of the way full with the melon mixture; then gently top it off with Prosecco.
- The remaining melon mixture can be refrigerated and enjoyed for up to 1 day.
