Ingredients

  • 1.50 oz Appleton Estate 8 Year Old Reserve rum
  • 2 dashes Angostura bitters
  • 2 oz Brut Champagne
  • 6 fresh mint leaves
  • 1 oz Simple syrup
  • 0.50 oz Fresh lime juice
  • Lime peel to garnish

Instructions

  1. In a cocktail shaker, add the mint leaves, lime juice, and simple syrup.
  2. Gently muddle the ingredients, then add ice to the shaker.
  3. Pour in the rum and add the bitters, then close the shaker securely.
  4. Shake the mixture until properly chilled.
  5. Double strain the cocktail into a chilled coupe glass.
  6. Top the cocktail with Champagne.
