Ingredients

  • 2 medium peaches, peeled and sliced
  • 1 star anise
  • 1 (750 ml) bottle vodka
  • 0.50 oz peach and anise aquavit
  • 0.50 oz peach purée
  • Sparkling wine, to top

Instructions

  1. Prepare the aquavit by combining peaches with vodka and allowing it to steep for 4 weeks.
  2. After 4 weeks, add one star anise to the mixture and steep for an additional 1 week.
  3. Strain the infused aquavit.
  4. Combine the peach and anise aquavit with peach purée in a champagne flute.
  5. Top with sparkling wine.
