Ingredients
- 3 1/2 oz caster sugar
- 2 fl oz water
- 2 fl oz bourbon whiskey
- 1 fl oz freshly squeezed lemon juice
- 1 fl oz fresh free-range egg white (about 1/2 an egg white, optional)
- 2 dashes Angostura bitters
- 2 handfuls ice
Instructions
- In a small non-stick saucepan, heat caster sugar and water, stirring until the sugar dissolves to make the sugar syrup. Let it cool.
- Combine 1 tablespoon of the cooled sugar syrup, bourbon, lemon juice, egg white, and bitters in a cocktail shaker.
- Dry shake the mixture vigorously for 8-10 seconds, then add ice and shake again for the same duration to achieve a smooth texture.
- Strain the whiskey sour into a rocks glass using a hawthorne cocktail strainer and a fine mesh strainer.
