Ingredients

  • 1 cup raspberries
  • 1.50 tablespoons sugar
  • 8 sprigs fresh tarragon
  • 1.50 tablespoons red-wine vinegar
  • Ice
  • 0.50 cup chilled sparkling water

Instructions

  1. In a large nonreactive pot, combine raspberries, sugar, and tarragon. Let it sit at room temperature for 1 hour, stirring occasionally.
  2. Cook the raspberry mixture over medium heat until it starts to simmer, about 5 minutes.
  3. Add the red-wine vinegar and continue cooking, stirring occasionally, until it comes to a bare simmer (do not let it boil), for 3 to 5 minutes. Remove from heat.
  4. Cover the pot with cheesecloth or a clean kitchen towel and let it stand at room temperature for 24 hours.
  5. Discard the tarragon and strain the mixture into an airtight container. Refrigerate the shrub until cold, at least 1 hour and up to 1 month.
  6. To make each drink, fill a glass with ice, add 1 1/2 tablespoons shrub, and top with sparkling water. Stir once and garnish with fresh raspberries and tarragon, if desired.
