Tropical Spiced Coquito
A delightful Puerto Rican coconut eggnog with a tropical twist, featuring creamy coconut milk, sweetened condensed milk, rum, and warm spices – a perfect holiday indulgence.
Ingredients
- 1/4 cup evaporated milk
- 2 whole cloves
- 1/2 cinnamon stick
- 1/2-inch piece ginger, peeled and sliced crosswise
- 3 tbsp sweetened condensed milk
- 1/4 cup coconut milk
- 1 to 2 oz white rum
- 1 large egg yolk
- 1/4 tsp vanilla extract
- Pinch of ground cinnamon
- Pinch of freshly ground nutmeg
Instructions
- In a small saucepan, bring evaporated milk, cloves, cinnamon stick, and ginger to a boil over medium-high heat.
- Remove from the heat and let the spiced milk steep for 30 minutes. Strain and discard the solids, then let it cool to room temperature.
- In a blender, combine the spiced milk, sweetened condensed milk, coconut milk, rum, egg yolk, vanilla, cinnamon, and nutmeg. Blend until fully combined and foamy, for about 1-2 minutes.
- Serve the coquito chilled and dust with additional cinnamon and nutmeg if desired.
