Ingredients

  • 1/8 cup coconut water
  • 5/16 cup fresh pineapple chunks with juice
  • 3/16 cup coconut vodka
  • 1/16 cup Malibu Coconut Rum
  • 1/32 cup blue curacao (+ more to adjust color)
  • 1/32 cup lime juice
  • 4.50 oz club soda or sparkling water
  • ice

Instructions

  1. In a blender, puree pineapple chunks with juice and coconut water until smooth.
  2. Juice 2 or 3 limes until you have 1/2 cup of lime juice.
  3. Add pineapple puree to a pitcher, then pour in Malibu Coconut Rum, coconut vodka, and lime juice. Stir to combine.
  4. Gradually add blue curacao to the pitcher until the desired turquoise color is achieved.
  5. When ready to serve, fill a glass with ice, pour 2/3 of the way with the cocktail mixture, then top with club soda and sparkling water.
